Our signature Chardonnay grapes are harvested from Fruithaven Vineyard. The free run juice is barrel fermented and aged sur lie for 11 months in 100% French oak barrels (25% new oak). A small portion of the wine underwent a malolactic fermentation within barrel to round out the mouth-feel. Clear and bright with a bouquet of red apple, buttered biscuit, toasty oak and sweet vanilla extract. A full-bodied, rich and flavourful Chardonnay. Flavours of red apple, lemon, spice and toasty oak unfold on the palate. Notes of tropical fruit, grilled lemon and spicy oak linger on the finish. Serve with smoked salmon risotto; creamy mushroom soup; baked butternut squash; grilled pork chops with Dijon and tarragon; cream sauces on pasta tossed with salmon, shrimp or scallops; grilled firm fillets of fish on cedar plank; roasted game hen with pine nut stuffing; turkey pot pies; smoked salmon and cream cheese appetizers.
